What We Look For...

We are looking for a rockstar Director of Catering to represent the hotel to potential clients, booking business for social groups needing catering and/or guest rooms.

The Key Responsibilities:

  1. Direct and supervise Catering Sales Managers and Executive Meeting Manager.
  2. Total catering revenue versus budget - meets or exceeds goals set by Director of Sales & Marketing.
  3. Accurate Forecasting and Budgeting for all Banquet and Catering Revenue.
  4. Maximize revenue by selling meeting space with all facets of the hotel within assigned market segments, using effective written and oral communication.
  5. Coordinate and facilitate group catering.
  6. Sell local Catering Service including meeting and banquet facilities.
  7. Working knowledge of banquet department (sets, AV equipment, supervision, scheduling, service, menu planning).
  8. Ability to design menus (with Executive Chef) to maximize operating profit.
  9. Direct Catering and Banquet operations to internal audit standards.
  10. Coordinate catering sales by establishing markets, goals and advertising techniques.
  11. Attend and conduct pre/post convention meetings.
  12. Prepare and produce convention group resumes.
  13. Process reports - weekly, monthly, quarterly, and annually.
  14. Respond to dissatisfied guests and resolve problems to prevent reoccurrence of similar challenges.
  15. Prepare proposals, letters, thank you notes and follow up.
  16. Create incentives, plans on property to increase sales, service and satisfaction as needed.
  17. Facilitate BEO meetings and review Catering Sales contracts and BEOs.
  18. Administer state liquor laws as they pertain to banquet operations.
  19. Review market information to determine guest needs, volume potential, discount times.
  20. Develop events to accommodate goals of the property (i.e., awards banquets, charity events, etc.).
  21. Solicit organizations, explain services and facilities.
  22. Coordinate sales and planning efforts with Director of Sales & Marketing.
  23. Conduct monthly diary audit.
  24. Follow up and maintain reader board surveys.
  25. Maintain integrity of office procedures (full and accurate usage of Delphi, filing, FBL, diary entries, BEOs, ready files, etc.).
  26. Assist in special sales related projects, (i.e., photo shoots, sales blitzes, openings, etc.).
  27. Process deposit checks appropriately and reviews accounts to ensure proper billing occurs.
  28. Approve all menus and pricing.
  29. Ensure that all details for all groups and catering events are completed on time.
  30. Maintain a good working relationship with other departments, associates and guests.
  31. Control use of meeting space in accordance with hotel space release/free sell policy.
  32. Monitor and manage hotel compliance in Signature and Guest Satisfaction Scores Programs.
  33. Communicate with Director of Sales & Marketing regarding all aspects of Catering operations.
  34. Act as Manager on Duty as scheduled.
  35. Attend all mandatory meetings (i.e., departmental, staff, F&B, BEO, pre/post convention, etc.).
  36. Select, train, supervise, develop, schedule, discipline, and counsel associates according to Hotel and BPR Hotels policies and procedures.
  37. Conduct performance appraisals.
  38. Perform all other duties as assigned by supervisor to include cross training, MOD shifts, CPR and first aid training.
  39. Implement, monitor and maintain departmental inventory, record keeping, accounting, budget and purchasing policies according to Sunstone policies and procedures.
  40. Be a leader and role model to all employees.
  41. Additional duties as necessary and assigned.

The Model Qualifications:

  1. High School Diploma or GED is required.
  2. Bachelors or higher graduate degree preferred.
  3. 3+ years of Catering experience.
  4. 1+ year managerial experience.
  5. 5+ years hotel/hospitality experience.
